Lemon Vinaigrette Caesar Salad

INGREDIENTS 

Salad

  • 1 head Romaine

  • 4 strips of bacon

  • ½ C cherry tomatoes halved

  • ½ C roasted almonds

  • ½ C shaved parmesan

  • Croutons for garnish

Vinaigrette

  • ⅔ C Paducah Olive Oil Co. lemon olive oil

  • 1 T honey

  • 3 T lemon juice

  • 3 T grated parmesan

  • 2 cloves minced garlic

  • ½ t salt

  • ¼ t pepper

INSTRUCTIONS 

  • Tear lettuce and put in a large salad bowl

  • Cook bacon and crumble in with lettuce

  • Add almonds, parmesan 

  • Mix all dressing ingredients well and add to salad

  • Garnish with croutons

  • **For a quick pasta salad, omit the lettuce and croutons and add cooked pasta of your choice**

  • **For a quick dinner, add some rotisserie chicken to the top
