  • 1 link Italian sausage (removed from casing)

  • ¾ C water

  • 4 whole eggs

  • 4 egg whites

  • 2 T Italian sausage broth

  • ½ C seeded tomatoes

  • ¼ C Italian seasoning

  • 1 C shredded mozzarella cheese

INSTRUCTIONS 

  • Preheat oven to 350

  • Spray 9 in pan with non-stick spray

  • Cook sausage in ¾ C water and smash once cooked through (reserve 2 T for the sausage broth)

  • In a large bowl mix the 4 eggs and 4 egg whites together

  • Add in sausage, broth, tomatoes, Italian seasoning, and shredded cheese

  • Add mixture to prepared 9 in pan and cook for 25 minutes.

  • Feel free to add any seasonings or vegetables to suit this to your liking
