Hot Chicken Salad
INGREDIENTS
4 boneless chicken breasts
1 large Vidalia onion
3 stalks of celery
2 C shredded sharp cheddar cheese
1 C Duke’s mayonnaise
1 T lemon juice
½ t garlic powder
½ t onion powder
¼ t ground mustard
1 t sea salt
1 ½ coarse ground black pepper
Crushed potato chips
INSTRUCTIONS
Preheat oven to 375
Boil chicken, place in a bowl and pull apart with a fork
Slice and dice onion and celery and add to shredded chicken
Stir in mayo (if chicken breasts are large, you may want to add more)
Stir in lemon juice
Add all of the spices including the salt and pepper
Stir in shredded cheese
Mix all ingredients well
Pour into a lightly greased 9X9 or 9X11 casserole dish
Bake for 30 min
For the last 5 minutes of baking, top with crushed potato chips
Feel free to make it your own by adding different seasonings!
