Hot Chicken Salad

INGREDIENTS 

  • 4 boneless chicken breasts

  • 1 large Vidalia onion

  • 3 stalks of celery

  • 2 C shredded sharp cheddar cheese

  • 1 C Duke’s mayonnaise

  • 1 T lemon juice

  • ½ t garlic powder

  • ½ t onion powder

  • ¼ t ground mustard

  • 1 t sea salt

  • 1 ½ coarse ground black pepper

  • Crushed potato chips

INSTRUCTIONS 

  • Preheat oven to 375

  • Boil chicken, place in a bowl and pull apart with a fork

  • Slice and dice onion and celery and add to shredded chicken

  • Stir in mayo (if chicken breasts are large, you may want to add more)

  • Stir in lemon juice

  • Add all of the spices including the salt and pepper

  • Stir in shredded cheese

  • Mix all ingredients well

  • Pour into a lightly greased 9X9 or 9X11 casserole dish

  • Bake for 30 min

  • For the last 5 minutes of baking, top with crushed potato chips

Feel free to make it your own by adding different seasonings!
