5 MINUTE PEA & ARUGULA PESTO PASTA SALAD

This light and fresh 5 Minute Pea & Arugula Pesto Pasta Salad is the perfect meal or side dish that can easily be made in just minutes!

You guys it literally doesn’t get much easier than this! Whether you’re looking for a quick easy dinner during a busy work week or need a last minute pasta salad to bring to a cookout, this 5 Minute Pea and Arugula Pesto Pasta Salad is the perfect dish that not only tastes delicious, but is ready in just minutes too! Plus, you can add any protein.

RECIPE

INGREDIENTS

• 1 (8.5 oz) package Barilla Ready Pasta (I used rotini)

• 2 cups loosely packed arugula leaves

• 1 cup fresh or frozen peas, thawed

For the pesto:

• 1 cup packed arugula leaves

• 1/2 cup fresh or frozen peas, thawed

• 1 Tbsp mint leaves

• 2 cloves garlic

• 2 Tbsp pine nuts

• 2 Tbsp freshly grated Parmesan cheese

• 1 1/2 Tbsp lemon juice

• 1/2 tsp. Does Steak seasoning

• 1/4 tsp salt & pepper

• 3 Tbsp olive oil

INSTRUCTIONS

1. Tear the top of the Barilla Ready Pasta pouch and place it in the microwave for 60 seconds.

2. In the bowl of your food processor, add arugula, peas, mint leaves, garlic, pine nuts, Parmesan cheese, lemon juice, Does Steak Seasoning and salt/pepper and pulse until finely chopped. Then with the motor still running, add olive oil in a slow stream until emulsified and creamy. (If you like your pesto thinner, add a little water)

3. In a large bowl, toss together warm pasta with pesto, arugula and peas. Season with cracked pepper and a little Parmesan, serve and enjoy
